Blueberry Muffins

Ingredients

12 muffins:

2 bananas, mashed

1 egg

252g Kodiak pancake mix (not the muffin mix)

96g brown sugar substitute

1/2 scoop any flavor protein powder (optional)

1/4 cup butter, melted

3/4 cup fat free milk

Vanilla extract

Cinnamon

150g frozen blueberries


These are the brands I use, and what the nutrition facts are based off of! I haven't tried any other high protein pancake mix to make muffins, so I'm not sure if other brands will work.

Directions

Preheat oven to 350. Mash the bananas in a large bowl, then crack the egg in. Put the bowl on a scale and tare the scale. Add the pancake mix, tar it again, then add the brown sugar substitute. Add the rest of the ingredients except for the blueberries and mix. Once mixed, add in the blueberries. Divide into 12 lined cupcake tins and bake until a toothpick comes out clean, around 16-20 minutes.


Let muffins cool before storing. Place 1-3 muffins in ziploc bags and store in the freezer. When ready to eat, microwave for about 2 minutes.


I usually eat 1-3 muffins along with 1-3 eggs, depending on my current macros.
