Protein Blueberry Pancakes

Ingredients

1 Serving

1/2 cup Kodiak Pancake Mix (63g)

1 tbsp Flaxseed Meal (6g)

1/3 cup Water

50g Blueberries

Optional - A few drops of Almond Extract, Strawberry Extract, or Cinnamon


Directions

Heat some butter in a frying pan. (Yes, just use real butter. It makes them taste so much better and isn't full of random chemicals like the sprays are). You can wipe off the extra after it melts if you're worried about going over on your calories.

Add the pancake mix and flaxseed to a bowl. Mix in the water, then add the extract and blueberries.


Cook them just like regular pancakes! (They might take a little longer to cook than you are used to).


I eat them like a cookie without syrup. But if you do use syrup, weigh it and include it in your macros! It's going to make a big difference.


I recommend adding a couple eggs on the side for more protein & fat. Alternatively, you can add 1/4-1/2 scoop of protein powder to the pancakes if you don’t like eggs and need more protein, but this dries them out pretty quickly.
