Summer Chicken & Rice Salad w/ Honey Mustard

This is sweet, refreshing, and packed with nutrients! If you want more carbs, use rice. If you want less carbs and calories, use lettuce to make a traditional salad. (Or use both!)
Ingredients
1 serving
4oz chicken
2.8oz sweet potato
3.5oz asparagus
2 cups of lettuce or 1/4 cup rice (dry)
1.75oz red radish
2.8oz strawberries
2.8oz tomatoes
Dressing:
1/2 tsp olive oil
1 tsp mustard
1 tsp honey
2 tsp balsamic vinegar
Directions
Cook rice according to package and set aside.
Cook chicken and cut into bite size pieces.
Chop the sweet potato and asparagus into bite size pieces. Heat a little oil in a frying pan, and sauté the sweet potato and asparagus.
Mix dressing ingredients in a seperate bowl. Combine all ingredients and enjoy!
