Summer Salad w/ Honey Mustard

Ingredients

1 serving

4oz chicken, cooked and diced

2.8oz sweet potato

3.5oz asparagus

2 cups of lettuce or ½ cup rice

1.75oz red radish

2.8oz strawberries

2.8oz tomatoes

Dressing:

1/2 tsp olive oil

1 tsp mustard

1 tsp honey

2 tsp balsamic vinegar


Directions

Chop the sweet potato and asparagus into bite size pieces. Heat a little oil in a frying pan, and sauté the sweet potato and asparagus. Mix dressing ingredients. Combine all ingredients and enjoy!
